SWEET POTATO PIE


INGREDIENTS
  • 1 cup Sweet Potatoes (mashed)
  • 2/3 cup Brown Sugar
  • 1/3 cup Sugar
  • 1 Tbsp Flour
  • 1 tsp Ground Nutmeg
  • 1 Tbsp Cinnamon 
  • 1/2 teaspoon Salt
  • 1 tsp Vanilla extract
  • 3 Eggs
  • 1 can (12 oz) Evaporated Milk

DIRECTIONS
See Perfect Pie Pastry recipe and prepare for crust.
Preheat the oven to 400 degrees F.
  • Mix together the mashed sweet potatoes, sugar, flour and spices.
  • Blend together well with a whisk.
  • Add eggs and whisk.
  • Add evaporated milk a third at a time and whisk into the filling.
  • Pour through a fine strainer and into the pie shell.
  • Bake for 30 minutes at 400 degrees F.
  • Reduce the heat to 350 degrees F.
  • Bake for approximately 30 additional minutes, until pie is set.
  • Cool to room temperature on a rack.  

Great served with whipped cream.

Preparation Time: 20 minutes
Serves 6 -8
